Saturday in the Kitchen: A Really Easy Recipe for Dirty Rice

DIRTY RICE
1 Pound Ground Meat
1 Pound Spicy Ground Sausage
3 Stalks Celery Finely Diced
1 Bell Pepper Finely Diced
1 Onion Finely Diced
2 Tablespoons Garlic Minced
1 Tablespoon Tony Chachere’s
1 pot Rice ( I use a Rice steamer so I cook about 2-3 Cups)

Brown ground meat and sausage together (do not drain). Add diced
vegetables and Seasoning. Cook till veggies are tender. Add in Rice
and Serve.

By the way, this recipe includes the “Holy Trinity” of Cajun dishes: Onions, bell peppers, and celery. It is a variant of the original French mirepoix. This mirepoix is the base for nearly all of the regional cuisines of Louisiana. The “trinity” is usually made with roughly equal proportions, and occasionally included with garlic and parsley added. It is a misnomer that Paul Prudhomme originated the term in 1981, since my grandmother used that term when I was a teenager.

Since the Acadian/Cajun community originally was highly steeped in Roman Catholicism, no doubt, that is where the term came from. The smell of those 3 ingredients saute’ing on the stove always takes me back to my childhood, with great anticipation for enjoying a delicious meal.
